BAKED RICE PUDDING 
1 qt. skim milk
1/2 c. rice
1/2 tsp. salt
1/2 tsp. nutmeg
1 tsp. vanilla
1 tsp. liquid sweetener

Combine all ingredients, except sweetener, in 1 1/2 quart casserole. Bake uncovered for 2-2 1/2 hours in 300 degree oven. Stir frequently. After baking, stir in sweetener. Serve chilled. Serves 6 - 115 calories per serving. Add raisins before baking if you like (1 tablespoons = 26 calories.)
