POLISH (PIEROZKI) CHEESE DUMPLINGS | |
2 c. flour 2 eggs, well beaten Pinch of salt 2 tbsp. melted butter Mix together. Make the dough so that it will be firm. Knead it well on a well floured board. Roll to about 1/8 inch thickness and cut into circles with a glass (about 3 inches wide). FILLING: 1 1/2 lbs. dry cottage cheese (if you buy reg. sm. curd, drain it well) 5 potatoes, peeled, boiled and mashed 1 sm. onion, diced 1 tbsp. melted butter Salt and pepper to taste Mix the filling ingredients together well. Place a small amount on each circle. Fold over and seal with a fork brushed through flour. Place, a few at a time, into boiling water until they bob to the top of the water, about 3-4 minutes. Drain and rinse with cold water and drain well. Place in dish and cover with melted butter. Serve with sour cream. Delicious! |
