COFFEE LIQUEUR 
4 c. sugar
1/2 c. instant coffee, not freeze dried
1/4 tsp. salt
3 c. water
2 1/2 c. vodka
3 tbsp. vanilla

In a 3 quart saucepan, over moderate heat, stir together sugar, coffee, salt and water until sugar is dissolved, rapidly bringing to boil and boil gently until reduced to about 31/2 cups, about 1 hour. Off heat, stir in vodka, then vanilla. Close tightly and store at room temperature.
