CHOCOLATE CUPCAKES WITH FUDGE
FROSTING
 
1/2 c. boiling water
2 squares chocolate
1 c. flour
3/4 tsp. salt
1 c. sugar
1/2 tsp. baking soda
1/4 c. salad oil
1/4 c. milk
1 egg

Pour boiling water of chocolate; cool. Sift together flour, salt, sugar and baking soda. Add salad oil, milk, egg and cooled chocolate mixture. Beat 4 minutes. Pour into paper lined pan. Bake at 350°F for 20 to 25 minutes.

Makes 1 dozen.

CHOCOLATE FUDGE FROSTING:

3 squares chocolate
5 tbsp. butter
3 1/2 c. confectioners' sugar
7 tbsp. milk
Dash of salt
1 tsp. vanilla

Melt chocolate with butter. Measure the confectioners' sugar into a mixing bowl. Stir in milk, salt and vanilla. Add the mixture and beat thoroughly until spreading consistency. Will frost 24 cupcakes or 1 layer cake.
