CHOCOLATE CHUNK COOKIES 
1/2 c. butter - cool room temperature
1/2 c. sugar
1/4 c. firm brown sugar
1 tsp. vanilla
1 egg
1 c. flour
1/2 tsp. salt
2 pkgs. (4 oz. each) chocolate chunks
1 1/3 c. flake coconut (optional)
1 tsp. baking soda
1/4-1/2 c. chopped nuts

Beat butter, sugars, vanilla and egg until light and fluffy. Mix flour with soda and salt; blend in butter. Mix. Stir in chocolate chunks, coconut and nuts. Chill 1 hour. Drop 2 inches apart by heaping tablespoons onto ungreased sheet. Bake at 350 degrees for 12-15 minutes or until it browns. Cookies will be soft in center when done. Cool 2 minutes before removing from sheet. If desired place an additional 4 ounces of chocolate chunks on tops of cookies before baking.
