FLORENTINE BEEF AND PASTA 
1 1/2 lbs. lean ground beef
1/2 tsp. salt
1/4 tsp. pepper
2 (8 oz.) cans tomato sauce
1/2 tsp. oregano
1/2 tsp. basil
1/2 c. water
3 c. cooked wide noodles
1 (10 oz.) pkg. frozen spinach, cooked
1 c. cottage cheese
1/4 c. minced onion
3 tbsp. grated Parmesan cheese
1 c. shredded Mozzarella cheese

Brown beef with salt and pepper. Drain fat. Add tomato sauce, oregano, basil and water. Simmer, uncovered 15 minutes. Stir in noodles. Drain spinach almost dry; combine with cottage cheese, onion and Parmesan. Place half of meat mixture in bottom of 1 1/2 quart baking dish. Add spinach mixture to form layer. Top with remaining meat mixture. Bake 20 minutes at 375 degrees. Top with Mozzarella. Bake 10 minutes longer. Makes 6 servings.
