VEGETABLE BEEF CHOWDER 
1 lb. ground beef
1 c. canned tomatoes
1/2 c. carrots, diced
1/2 c. celery, diced
1/2 c. onion, diced
1/2 c. potatoes, diced
1/4 c. rice or barley
1 1/2 c. water
Salt & pepper to taste

Brown meat. Drain. Add other ingredients and simmer until vegetables are tender, approximately 1 hour. Recipe can easily be doubled.
