VEGETABLE CHEESE CHOWDER 
3 tbsp. butter
1/2 c. chopped onion
1/2 c. chopped celery
1 c. sliced carrots
1 c. boiling water
1 1/2 c. shredded sharp cheese
4 tbsp. flour
1 quart milk
2 tsp. salt
1 (10 oz.) pkg. frozen chopped broccoli, partially thawed

Saute onion in butter until lightly browned. Add celery, carrots and water. Cover and simmer for 10 minutes. Add broccoli and cook for 5 minutes. Mix flour with a little milk and add to vegetables with rest of milk. Add salt. Cook and stir until slightly thickened. Add cheese and stir until melted. Serve.
