ZUCCHINI CASSEROLE 
10 med. zucchini squash, sliced thin
2 onions, sliced thin
1 can stewed tomatoes
1 (6 oz.) can Ortega chiles
Grated cheddar cheese

Flour, salt and pepper sliced zucchini. Fry with onions in oil. When done, add stewed tomatoes and chiles; mix together and place in casserole dish. Grate cheddar cheese and put on top. Bake at 350 degrees until cheese melts.
