MARY'S CHOCOLATE CHIP CAKE 
2 1/2 + 1/8 cups boiling water
1 1/2 cups oatmeal
1 1/2 cups brown sugar
1 1/2 cups cane sugar
1/2 tsp. salt
1 1/2 tsp. baking soda
1 1/2 tbsp. cocoa powder
3/4 cup (1 1/2 sticks) unsalted butter, softened
4 large eggs
2 1/2 + 1/8 cups flour (almond flour works as well, if you like that taste)
1 (16 oz.) bag pecans or walnuts
1 (16 oz.) bag chocolate chips (Guittard - semisweet are the best)

Put oven at 350°F. Grease and flour at least an 11-inch cake pan. Mix hot water and oatmeal in a large mixing bowl and let sit for 10 minutes.

Add sugars, salt, baking soda, and cocoa and mix thoroughly together with water and softened oats. Beat in butter until mixed. Beat in eggs. Slowly add flour while mixing, and ensure there aren't any lumps.

Add nuts and chocolate, mix well, then our into cake pan. Bake at 350°F for 40 minutes or until cake tests done.
