STUFFED PEPPERS 
6 green peppers, scooped, but left whole
2 tbsp. butter
2 med. onions, minced
1 lb. ground beef
1 c. uncooked rice
Salt, pepper to taste
1/2 c. grated cheese
1 (#2 1/2) can tomatoes

Simmer ground beef, onions, seasoning. Add rice and tomatoes. Mix well. Place peppers in 6 x 10 inch baking dish. Fill each pepper with mixture. Put remaining mixture around peppers. Top with cheese. Bake at 350 degrees for 45 minutes. Peppers may be covered with foil for 15 minutes if desired.
