HOT PORK TACOS 
1 pkg. pork chops, cut in small pieces fat removed

Put small amount of oil into an iron skillet. Cook pork on medium high heat. (Pork needs to cook fast.) While cooking chop:

1 lg. tomato
1 lg. onion
2 to 4 jalapenos (depending on taste)

When meat is brown, add above plus some dried parsley and salt. Continue to cook, stirring occasionally, until the onions and peppers are soft and tomatoes are liquid. Add enough water to cover the meat and boil down until a thick gravy has formed.

Heat tortillas; slice cheese and put on tortillas. Top with pork mixture. Serve with refried or pinto beans.
