MUSTARD PICKLE (QUICK) 
2 1/2 - 3 lbs. cucumbers
1 1/2 c. vinegar
1 c. water
1 c. sugar
1/2 c. prepared mustard
2 tsp. salt
1 tsp. prepared horseradish

Wash cukes and cut into 1/2" slices, measuring 8 cups. In large pan combine vinegar, water, sugar, mustard, salt and horseradish. Bring to boil. Put cukes in hot jars and pour boiling pickling liquid to within 1/2" of tops. Adjust lids. Process in boiling water bath 5 minutes. (Start timing when water returns to boil.) Yield: 4 pints.
