MOIST CHOCOLATE CAKE 
(Low in fat and cholesterol than cake using solid shortening and hard chocolate, easy and Delicious!)

2 c. flour
2 c. sugar
3/4 c. cocoa
1 tsp. baking powder
2 tsp. baking soda
Pinch of salt
1/2 c. vegetable oil
1 c. hot coffee
1 c. milk
2 eggs

Blend all ingredients with spatula. Blend in hot coffee before adding eggs so they don't "cook". Beat on medium speed for 2 minutes. For cupcakes bake at 375 degrees for 15 minutes (makes 30-36). For two 9 inch layers bake at 350 degrees for 30 minutes.
