CARROT CAKE | |
4 eggs 2 c. sugar 3 sm. jars carrots (baby food) 1 sm. can crushed pineapple 1 sm. can chopped walnuts 1 1/2 c. cooking oil 2 c. flour, all purpose 1 tsp. salt 2 tsp. baking soda 2 tsp. cinnamon 1 tsp. vanilla FROSTING: 4 oz. cream cheese 1/2 stick butter 1/2 box 10x powdered sugar Mix the first 6 ingredients in a large bowl. Slowly add the last 5 ingredients. Bake in a 350 degree oven for 55 minutes in a prepared 13 x 9 inch pan. Mix frosting ingredients thoroughly and spread on cake. Sprinkle with chopped walnuts. |
