LAYERED SUPPER 
2 lb. potatoes, peeled and thinly sliced
17 oz. can whole kernel corn, drained
1/2 c. green pepper, chopped
1 c. onion, chopped
2 c. carrots, sliced
1/2 can vegi-burger
8 oz. tomato sauce
1 c. shredded Cheddar cheese

Place potatoes in 12 x 7 inch baking dish. Season with salt and pepper. Arrange corn and green pepper over potatoes. Layer onion, then carrot. Crumble vegi-burger evenly over vegetables; sprinkle with more salt and pepper. Pat gently to smooth. Top with tomato sauce. Bake covered at 350 degrees for 2 hours; uncover and sprinkle with cheese. Let stand 10 to 15 minutes before serving.
