ORANGE JUICE CAKE 
4 eggs
1 tsp. vanilla
2 c. sugar
2 c. flour
2 tsp. baking powder
Pinch of salt
1 c. milk
2 level tbsp. of butter

Beat 4 eggs with vanilla; add sugar; sift together flour, baking powder, and salt; heat to scalding the milk and butter; pour hot milk mix in at once after adding flour; put in oven immediately. Bake at 320-350 degrees for 20-25 minutes.

TOPPING:

4-6 oranges
1/2 c. sugar

Squeeze the juice of 4-6 oranges and grate rind of 1/2 of the oranges. Mix with sugar and spoon over hot cake. Refrigerate and top with fresh whipped cream when cool. Top with coconut if desired.
