BD'S GINGER SESAME AND HABANERO
WINGS
 
4 lb. chicken wings, cleaned and cut at joints, tips discarded

BD'S MARINADE:

1 1/2 tbsp. ground ginger
2 small (or 1 large) garlic clove, chopped finely
2 habanero peppers, chopped finely*
2 tbsp. pineapple juice
2 tbsp. rice vinegar
6 tbsp. soy sauce
2 tbsp. olive oil
3 tbsp. sesame oil
1 tbsp. crushed red pepper
1 tbsp. sesame seeds

Note: For the habaneros, I like to keep the seeds in because I like it really hot, if you take the seeds out, it wont have as much spice!

Take all the ingredients, except the wings, and mix in a large bowl.

Put the wings in a big Ziploc style freezer bag, and add the marinade to the wings.

Store in refrigerator for at least 6 hours, or up to 24 hours -- flip it over a few times to get a real nice coating on them.

Spread on greased cookie sheet and bake in the oven at 350°F for 15 minutes -- DO NOT THROW AWAY THE BAG OF MARINADE!

Dump the marinade into a bowl, and put the wings in after they've baked, turning them to re-coat with the marinade.

Put them on the grill, right on the coals (or on high if using gas) and use the high temperature to turn the marinade into a glaze on the outside, flipping regularly.

If they're not done by the time you get your desired coloring on the outside, move them off the coals (turn the heat down to medium-low), and cover the grill, letting them finish cooking, it shouldn't take long.
