RAW APPLE OR PEAR CAKE 
2 cups raw fruit
1 cup sugar
1/2 cup vegetable oil
1 egg, beaten
1 cup chopped nuts
1 1/2 cups flour
1/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg

Preheat oven to 325°F.

Grease and lightly dust with flour and 8X8-inch baking pan.

Pour sugar over fruit, and let stand 30 minutes. Combine remaining ingredients and mix well with fruit.

Bake for 1 hour. If you double the recipe, cook 1 1/2 hours.
