HAM AND POTATOES AU GRATIN 
1/2 c. chopped green peppers
1/2 c. chopped onion
4 tbsp. butter
2 tbsp. flour
Dash of pepper
2 c. milk
8 oz. shredded cheese (Velveeta)
1/2 c. mayonnaise
2 lb. ham (diced)
6 med. potatoes (diced and boiled)

In large skillet cook onion and green pepper in butter until tender. Stir in flour and pepper. Add milk all at once and bring to boil, stirring constantly. Reduce heat; add cheese, stir, then add potatoes and ham. Whip in mayonnaise. Bake in moderate oven (350 degrees) for 30 to 35 minutes. 6-8 servings.
