HAM AND EGG AU GRATIN 
6 tbsp. butter
6 tbsp. flour
2 1/2 c. flour
2 tbsp. parsley
2 tbsp. grated onion
A few pinches of salt, as desired
2 c. cooked ham
2 c. cooked potatoes, cubed
1 c. shredded cheddar cheese
6 hard-boiled eggs

Cook onion until tender, blend in flour, salt and milk. Cook until bubbly, stirring constantly. Add 1 cup cheese, stir until melted. Add cooked ham, eggs, potatoes and parsley into 1 1/2 quart casserole dish. Top with cheese. Bake at 350 degrees for approximately 30 minutes.
