SIMPLE CREAMY RICE PUDDING 
1 cup regular rice
1 cup sugar, divided
2 quarts milk (8 cups)
3 eggs
1 tsp. salt
1 tbsp. vanilla
1 tsp. cornstarch
handful of raisins (optional)
sprinkle of cinnamon (optional)

Using a heavy pan, bring rice, 1/2 cup sugar, and milk to boil. Reduce heat to medium and boil gently till rice is cooked. Stir often. Beat together remaining ingredients (aside from raisins and cinnamon) when rice is cooked remove from heat and pour in sugar and egg mixture. Add raisins. Pour into dish and sprinkle with cinnamon.

Notes: If using skim milk add extra cornstarch and rice and cook a little longer. If making 1/2 recipe use 2 eggs.
