SWEET-AND-SOUR CAULIFLOWER 
1/2 head of cauliflower, cleaned and broken into small flowerets
1/2 lb. chunked tofu
1/2 c. vinegar
1/2 c. sugar
1 tbsp. cooking oil (preferably Safflower oil)

Fry the tofu in the cooking oil. Add the vinegar and sugar, stirring until dissolved. Add the cauliflower and simmer for 25 minutes, stirring occasionally. Makes 4 servings.
