FRENCH ONION SOUP 
2 tbsp. oil or butter
1 1/2 c. onions, thinly sliced
6 c. beef broth
Fresh ground pepper, to taste
Parmesan cheese
Swiss cheese
6 slices French bread, toasted

Saute onions in oil until translucent. Add broth and pepper. Simmer 30 minutes. Divide into 6 oven-proof casseroles or bowls. Top each with a slice of bread, sprinkle with Parmesan then Swiss cheese. Place in oven and bake at 400 degrees until cheese is melted. Serve immediately.
