FRESH APPLE CAKE | |
1 stick butter 1/2 c. oil 2 c. sugar 2 eggs 2 c. flour 1 tsp. baking powder 3/4 tsp. baking soda 1/2 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. nutmeg 3 c. chopped apples (about 3 med. Grannie Smith apples) 1 1/2 c. chopped pecans Mix together butter, sugar and eggs. Add apples, then dry ingredients. Bake in floured Bundt pan at 325 degrees for 45 to 55 minutes. FROSTING: 3 to 4 oz. cream cheese 1/2 stick butter 1/2 tsp. rum flavoring 1 to 1 1/2 c. powdered sugar (add until proper thickness is reached) Mix well, then slowly pour frosting over cake. |
