FRESH APPLE BUTTERSCOTCH CAKE 
2 1/2 c. self rising flour
1 tsp. cinnamon
2 c. sugar
1 c. oil
2 eggs
3 c. chopped apples
1 c. pecan nuts
1 (12 oz.) pkg. butterscotch chips

Preheat oven to 350 degrees. Sift flour, cinnamon, and sugar. Add oil and eggs. Beat until well mixed. Add apple and nuts, mixing well. Pour batter into 9 x 13 inch greased pan. Sprinkle butterscotch chips over top. Bake for 1 hour. Do not over bake.
