BUTTERSCOTCH - APPLE CAKE 
2 1/2 c. plain flour
1 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 c. Crisco oil
2 eggs
2 c. sugar
3 c. chopped apples
1 c. pecans, chopped coarsely
1 (8 oz.) pkg. butterscotch morsels

Sift dry ingredients together and set aside. Mix and beat sugar, oil and eggs together. Add sifted dry ingredients and mix well. Add apples and pecans. Pour in greased and floured 9 x 13 inch pan. Spread evenly butterscotch morsels on top. Bake at 350 degrees for 1 hour. Best if made and kept airtight at least 24 hours before serving. Cake is good as it is but, if desired use brown sugar frosting.

BROWN SUGAR FROSTING:

2 c. packed brown sugar
1 c. butter
1/3 c. milk
3 c. confectioners' sugar
1 tsp. vanilla

Put brown sugar, butter and milk in a medium saucepan and bring to a gentle boil. Stir until butter melts and sugar is dissolved and mixture is smooth. Using electric mixer gradually mix confectioners' sugar and vanilla into hot mixture. (Or pour the hot mixture into a bowl and beat in sugar and vanilla.) Immediately spread warm frosting on cake.
