LUCY'S FRESH APPLE CAKE WITH BUTTERSCOTCH CHIPS | |
1 c. oil 3 eggs 2 c. sugar 3 c. flour (plain) 1 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 3 c. chopped apples raw (red delicious apples) 1 c. chopped pecans 1 stick butter 1 c. coconut 1 (6 oz.) pkg. butterscotch chips Mix eggs, sugar, oil, butter and coconut. Sift together dry ingredients. Add dry ingredients to egg mixture. Mix well. Stir in apples and nuts. Pour into a greased 9 x 13 inch pan. Put morsels on top. Bake at 350 degrees for 55-60 minutes. |
