FRESH APPLE CINNAMON COFFEE CAKE 
1 3/4 c. flour
1/2 c. oil
2 tbsp. water
2 egg whites
2 c. all-purpose flour
1 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. orange peel
4 c. finely chopped apples
1 c. walnuts or pecans
1/4 c. brown sugar
1/4 tsp. cinnamon

Grease a 10-inch tube pan. In large bowl, combine the sugar, oil, water, and egg whites.

In a separate bowl, combine the flour, baking soda and cinnamon. Add the dry ingredients to the liquid mixture, and fold in the orange peel, apples, walnuts. The batter will be very thick. Transfer the batter to the prepared pan and sprinkle with sugar. Bake at 350 degrees for 55 minutes.

Combine brown sugar and cinnamon and sprinkle over the warm cake. Serves 18.
