2 eggs
1 1/2 c. Wesson oil
3 c. all-purpose flour
2 c. sugar
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
3 Red Delicious apples, chopped
1 c. pecans, chopped
2 tsp. vanilla

Beat eggs, add sugar and vanilla, mix flour, salt, cinnamon and soda. Mix with the eggs, sugar and vanilla mixture. Add apples and nuts. Grease bundt cake pan or spray with Pam. I prefer cake pan, comes out better. Bake at 325 degrees for 1 hour. Cool before removing from pan.

This year we celebrated our Christmas and also our baby's 32nd birthday, Saturday the 21 at our middle son's home. All 6 of our children and their companions were there. First time in quite a few years. All our grandchildren but 6 and our great grandson. All enjoyed it and we really appreciate the good Lord after 45 years of marriage for the food we had and the happiness. Hope to see all our Bluegrass friends more often this year.
