FRESH APPLE - PECAN POUND CAKE 
3 c. unsifted all - purpose flour
1 tsp. salt
1 tsp. baking soda
1/2 tsp. nutmeg
1/2 tsp. cinnamon
1 1/2 c. oil
2 c. granulated sugar
3 lg. eggs
2 tsp. vanilla
2 c. finely chopped, pared cooking apples (Yellow delicious, Rome or Granny Smith)
1 c. chopped pecans (or walnuts)
1/2 c. raisins

Combine flour, baking soda, salt, cinnamon and nutmeg, set aside. In large bowl, with electric mixer, beat together at medium speed oil, eggs and vanilla until thoroughly combined. Gradually beat in flour mixture until smooth. Fold in apples, nuts and raisins. Turn into a greased 10 inch tube or bundt pan. Bake at 325 degrees for 1 hour and 15 minutes, or until cake tester comes out clean. Cool in pan 10 to 15 minutes before removing.
