TOMATO SHERBET | |
6 tomatoes, ripe, pureed 1 tbsp. tomato paste 3/4 c. tomato juice 1 tbsp. green pepper, minced 1 tbsp. celery, minced 1 tbsp. basil, fresh, minced 1 tbsp. chives, minced 1 tsp. oregano, minced 1 tsp. garlic, minced 6 drops Tabasco sauce 1/3 c. sugar 2/3 c. water 1/3 c. vodka 1 tbsp. lime juice 1 tsp. lemon juice In large saucepan, gently simmer tomatoes, tomato paste, tomato juice, green peppers, celery, and spices for 15 minutes. Remove from heat and strain. Set aside. Dissolve sugar in water over heat until a simple syrup is formed. Chill until cold and add vodka, lemon and lime juices. Blend syrup with tomato mixture and pour into a 9x9 inch baking dish. Freeze for 3 hours or until frozen around the edges. Remove from freezer and place into a food processor. Process for about 10 seconds or until fluffy. Place in a suitable container for freezing and freeze until serving time. Serves: 4-6. |
