2 c. sugar 1 c. evaporated milk 1 (8 oz.) pkg. chopped dates 1 1/2 c. pecans, chopped 2 c. flaked coconut Mix together sugar and milk in 4 quart glass mix'n pour bowl. Mixrowave (high), uncovered for 4 minutes. Stir, scraping sides of bowl to dissolve sugar. Insert microwave candy thermometer. Then, microwave (high), uncovered for 4 t 6 minutes or until mixture reaches 235 degrees (soft boil stage), stirring when necessary to prevent boiling over. Stir in dates. Microwave (high) _, uncovered for 2 to 2 1/2 minutes or until dates are softened, stirring once. Cool until lukewarm. Add pecans and beat until candy is thick (about 5 minutes). Place coconut in shallow dish. drop teaspoonsful of date mixture into coconut. Form into balls with fingers while coating with coconut. Refrigerate until set. Makes about 8 dozen candies. Tip: chopped nuts can be substituted for coconut. |
