YELLOW RICE CASSEROLE 
1 (2-3 lb.) fryer
1/2 c. chopped celery
2 sm. chopped bell pepper
2-3 sm. chopped onions
2 pkg. yellow rice
1 c. grated Cheddar cheese
1 can cream of mushroom or cream of chicken soup

Boil chicken, celery, bell pepper, and onions together until chicken is done. Take chicken out of broth and debone. Put rice in broth and cook until almost done. Add chicken to rice and broth, stir easy; cover and cook until water is out. Put in 9x13 inch dish by layering the rice, soup mixed with enough water to make it soupy, and cheese. Cook in 350 degree oven until cheese is melted.
