PECAN DELIGHT PIE 
22 Ritz crackers
1 c. sugar
1 c. chopped pecans
3 egg whites
1 tsp. vanilla

Crush crackers. Add 1/2 cup sugar and nuts. Beat egg whites until stiff, using remaining sugar. Add vanilla. Fold in crushed crackers and pour into a 9 inch greased pie plate. Bake 20-25 minutes at 325 degrees. (Makes its own crust.) When cool, top with whipped cream or Dream Whip. Sprinkle with chopped pecans.
