STRAWBERRY MUFFINS 
1/2 c. butter
1 1/2 c. sugar, divided
2 eggs
2 c. flour
2 tsp. baking powder
1/8 tsp. salt
1/2 c. half and half
1 tsp. vanilla
2 c. strawberries, hulled & chopped

Cream butter and 1 1/4 cups sugar until light and fluffy. Add eggs, 1 at a time. Blend well, but do not over beat. Sift together flour, baking powder and salt. Add alternately with cream to the butter mixture. Add vanilla. Fold in the berries. Fill greased muffin tins 3/4 full with batter. Sprinkle the 1/4 cup sugar over muffins. Bake 375 degrees for 25 minutes or until lightly browned.
