MINESTRONE SOUP | |
1 lb. ground beef or turkey 1 sm. onion, chopped 1 lg. celery stalk, chopped 1/4 sm. head green cabbage, sliced 14 1/2 oz. can tomatoes 10 1/2 oz. can garbanzo beans 7 oz. can kernel corn 1 med. zucchini, sliced 3/4 c. med. shell macaroni 1 1/2 tsp. beef bouillon 1/2 tsp. dried basil 2 1/2 c. water Over high heat, brown beef or turkey with onion, celery and cabbage. Stir carefully so meat stays in chunks, until all pan juices evaporate, about 10 minutes. Add tomatoes, garbanzo beans and corn, all with their liquid, zucchini, macaroni, bouillon, basil and 2 1/2 cups water. Over high heat, bring to boil, stirring to break tomatoes. Reduce heat to low, cover and simmer about 10 minutes, until macaroni and vegetables are tender. 6 servings. 410 calories. |
