BASIC FRIED CHICKEN 
2-3 broiler fryer, cut up
Vegetable oil, about 2 c.
Salt & pepper
All purpose flour

Wash the chicken pieces and drain. Place the oil in a cast iron skillet to heat. Salt and pepper the chicken well and dredge it liberally in flour. Knock off the excess. When the grease is heated to 375 degrees, flour the chicken again and knock off the excess. Place the pieces skin side down in the pan. Cook for about 8 to 10 minutes per side, turning once, or until golden. Turn down the heat, loosely cover the pan and cook about 20 minutes more or until chicken is tender. Drain.
