SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
1 c. sugar
1/2 tsp. salt
2 eggs, beaten
1/2 stick melted butter
1/2 c. milk
1/2 tsp. vanilla

Mix all ingredients well. Spread into buttered baking pan.

Topping:

1 c. brown sugar
1/3 c. flour
1/3 stick soft butter
1 c. chopped nuts

Mix all together (will be crumbly). Spread over top of potatoes.

Bake at 340°F for 40 minutes.
