APPLESAUCE FRUIT CAKE | |
3 c. strained applesauce 1 c. shortening 2 c. white sugar 4 1/2 c. flour 4 tsp. baking soda 1 tsp. nutmeg 2 1/2 tsp. cinnamon 1/2 tsp. cloves 1 tsp. allspice 1 tsp. salt 3 eggs, beaten 1 lb. white raisins 1/2 lb. citron 1 lb. mixed candied fruit peel 1/2 lb. nuts 1/2 lb. candied cherries 1/2 lb. candied pineapple Boil sugar, shortening and applesauce together 5 minutes. Let stand overnight. Sift dry ingredients together 3 times. Fold beaten eggs into the applesauce mixture. Dredge all the chopped fruit and nuts in the flour mixture. Then mix all ingredients together. Bake in pans lined with wax paper in a slow oven at 250 degrees for 2 1/2 hours or longer depending on size of pan. |
