RHUBARB CUSTARD PIE 
3 eggs, lightly beaten
1/2 c. Half & Half
1 1/2 c. sugar
1 tbsp. flour
1/8 tsp. salt
4 c. rhubarb, chopped
1 9" pie shell, unbaked

Mix eggs and Half & Half. Add sugar, flour, salt and rhubarb. Mix thoroughly. Pour mixture into unbaked pie shell. Bake at 375 degrees for 15 minutes, then at 350 degrees for 30 to 45 minutes, until set. Top pie with meringue during last 15 minutes.
