PITA 
3 eggs
1 c. sugar
1/4 tsp. salt
3 lg. tbsp. shortening
1 tsp. vanilla
2 3/4 c. flour (approx.)
1 lg. can cherry pie filling or other

Cream sugar and shortening. Add eggs, salt and vanilla. Then start adding flour to make a soft dough. Do not add too much, just enough so it isn't sticky. Save 1/3 of dough then pat rest of dough in well greased and floured 9"x13" pan. Pat up sides and pan also. Fill with fruit. Take remaining dough and make strips as you would for bread sticks and criss cross over top. Bake at 375 degrees for about 30 to 35 minutes or until lightly browned.

If you use fresh fruit for this recipe, add milk, tapioca (for thickening) and cinnamon.

NOTE: Apricots, apples, plums, berries, etc. may be used. Cut in squares and serve.
