STRAWBERRY ICE CREAM DELIGHT 
1 (6 oz.) pkg. Jello gelatin, any red flavor
1 1/2 c. boiling water
1 c. canned pineapple juice
Ice cubes
1 c. vanilla ice cream
1 c. sliced or diced fresh strawberries

Completely dissolve gelatin in boiling water. Combine juice and ice cubes to make 2 1/2 cups. Add to gelatin and stir until slightly thickened, remove any unmelted ice. Measure 1 cup gelatin and stir in ice cream, let stand a few minutes to thicken, if necessary. Add strawberries to remaining gelatin and spoon about 1/3 into large bowl or 10 individual glasses. Add 1/2 of the creamy mixture. Repeat top with remaining fruit mixture. Chill until set. Makes 10 servings.
