“BETTY'S JIFFY CORNBREAD CORN CASSEROLE” IS IN:

BETTY'S JIFFY CORNBREAD CORN
CASSEROLE
 
1 (15 oz.) can cream style corn
1 (15 oz.) can whole kernel corn (do not drain)
2 eggs
1 (8 1/2 oz.) box Jiffy corn muffin mix
1 cup dairy sour cream
1 (10 oz.) can Rotel diced tomatoes (mild or hot - do not drain)
2 cups shredded Colby Jack cheese, divided in half

Combine all but 1 cup cheese. Bake in glass 9x13-inch pan with 1 cup cheese sprinkled over the top, at 350°F until top is lightly browned.

We call this Corn Souffle and a big favorite. Definitely lose the tomatoes (never had it this way) nor want it.

This is always a get together favorite, WITHOUT the tomatoes. I also use fresh corn cut off the cob instead of canned. YUMMY!

I agree with no tomatoes and I add an extra box of jiffy corn bread mix. It thickens it up and makes it more bready. Kids love it!

I made the recipe with no Rotel and only used cream corn. It was perfect! Next time, I'm going to try it with the whole kernel corn too. I bet it will be just as good. I don't think the Rotel would add anything pleasant to the recipe either.

I agree with Diane. This is one thing we eat every Christmas and our recipe does not include the rotel tomatoes either. I don't think the tomatoes in it sounds good. It is in my top handful of things to eat at Christmas.
