SALMON CASSEROLE 
1 can Salmon
1 can cream corn
1 box jiffy cornbread mix
1 small onion, diced
3 eggs beaten
2 tablespoons Mustard
2 tablespoons Ketchup
3/4 sleeve saltine crackers, crushed
salt and pepper
One medium casserole dish
vegetable spray

Combine salmon, eggs, onion, mustard, ketchup, crackers, salt and pepper in a mixing bowl. Mix thoroughly. Pat mixture into the bottom of a greased casserole dish.

Bake at 350°F until crispy, about 20 minutes. While this is baking, prepare Jiffy cornbread mix according to directions. Remove casserole from oven, pour cream corn over salmon mixture then add cornbread mix. Return to oven and bake until cornbread is done (about 15 to 20 minutes).

I don't really care for the Jiffy cornbread. I think it would have been better with regular yellow cornbread.The sweetness over rode the salmon.
