WINTER FRUIT COMPOTE 
1 lb. pitted prunes
1/2 c. sherry
1 can cherry pie filling
1 2/3 c. cut pineapple chunks & juice
2 (12 oz.) pkg. dried apricots
2 c. water

Preheat oven to 350 degrees. Put together all ingredients in oven proof casserole (2 1/2-3 quart) dish. Stir. Cover and bake 1 1/2 hours. Sauce thickens as it cools. Refrigerate.

Serves 4-6.
