SQUASH CASSEROLE | |
2 lbs. yellow squash, sliced 1 med. onion, chopped 2 tbsp. butter, melted 1 1/2 c. cheddar cheese, shredded 2 c. butter flavored crackers, crushed, Ritz works well 2 eggs, beaten 1 c. milk Salt & pepper to taste 1 c. buttered bread crumbs (optional) Cook squash and onions until tender and drain. Add to remaining ingredients except bread crumbs. Blend well and pour into a greased 2 quart casserole. Top with bread crumbs if desired. Bake at 350 degrees for 30 to 40 minutes. |
