SWEDISH MEATBALLS 
1 1/2 lbs. beef
2 well beaten eggs
2 slices bread soaked in milk and squeezed
3 tbsp. chopped parsley
1 1/4 tsp. salt
1/4 tsp. paprika
1/2 tsp. grated lemon rind
1 tsp. lemon juice
1 tsp. Worcestershire sauce

Mix together, shape into 1 1/2 inch balls brown in 1 tablespoon butter. Simmer covered until done (15 minutes) in 2 cups beef consomme.
