BRUNCH PIE 
1 pkg. frozen broccoli or spinach, cooked & drained
1 c. sour cream
1 c. creamed cottage cheese
1/2 c. Bisquick
1/4 c. butter
2 eggs
1/4 c. Parmesan cheese
1 tomato, sliced thin

Grease 9 inch pie plate. Spread broccoli in plate. Beat sour cream, cottage cheese, Bisquick, butter and eggs until smooth with hand mixer. Pour into plate. Top with sliced tomatoes. Bake at 350 degrees until knife comes out clean (about 30 minutes). Cool 5 minutes. Serves 6-8.
