CARROT RAISIN BREAD 
3 eggs
1 1/2 c. sugar
1 c. oil
2 1/4 c. whole wheat flour
1 1/4 tsp. baking soda
1 tsp. nutmeg
2 1/4 c. finely grated carrots
1 1/2 tsp. cinnamon
3/4 tsp. salt
1 1/4 c. raisins
1 1/2 c. nuts; optional

Beat eggs well; add sugar and oil; beat until light. Mix next 5 ingredients and add to egg mixture. Stir in raisins and nuts. Turn into greased 9 x 5 x 3 pan and bake 1 1/4 hours at 350 degrees.
